Mexican Cous Cous Salad
Ingredients

Boil the vegetable stock, add the cous cous turn removed
from heat and set aside. In a large bowl combine all the
other ingredients and stir. After the cous cous has set
aside for 10 minutes, fluff with a fork, and add it to the
salad bowl. Stir well and serve slightly above room
temperature.

Hand shred lettuce to bite size peices. Place in bowl. Add oil, vinegar, and garlic. Squeeze with hands till the lettuce is soppy and wilted. Add salt and pepper to taste.
Mix everything together, let sit 5 minutes, serve. Or: Mix everything together, chill in fridge. I made up this recipe one night when I decided to do something a little off the wall. My husband and I both really enjoyed it.

While the other ingredients are cooking, mix sauce ingredients together in a large glass bowl. Add pasta. Top with vegetables. Toss lightly to mix.
Cook up the barley for about 30 minutes on a med/low heat until it is soft and chewy. Mix together the dressing ingredients (mustard, olive oil and lemon juice)and pour it over all the ingredients. This stuff is joy!
Chop all the fruit into small bite-sized peices. Mix together in large bowl. Add whipped cream (enough to cover all the fruit) and mix togther well. Refrigerate and serve cold. Enjoy!
